My boys are not what you would call "out on a limb" eaters.
They have very particular tastes and when I try to change things,
it doesn't always go over well.
Last night, we opted for chicken. There are so many options but everyone wants something different.
I began browsing Pinterest, and then inspiration struck.
I breaded and fried the chicken and let the family create their own meals.
Here are the ingredients I used:
2.5 lbs Chicken breast. cut into nugget or bite sized pieces
1 cup bread crumbs
2 cups flour
1 packet dried Ranch Dressing
2 eggs, whisked well
Salt and pepper to taste
I mixed the dry ingredients in a bowl then transferred them to a large Ziploc bag. I bathed the chicken pieces in the egg wash then dropped them into the bag of dry ingredients and coated them thoroughly.
With the Canola Oil ready in the pan, I placed the chicken in the pan, about 7 minutes on each side, or until brown to my liking, then flipped the chicken to cook the other side.
When done, we have a large amount of chicken to use as we saw fit.
Anthony, my taco loving kiddo, decided on a chicken tortilla wrap with lettuce, cheese and taco sauce.
CJ, Mr. Plain at the moment, wanted to be like his big brother, minus the lettuce and sauce.
Luke, Lance and I had our home version of a KFC bowl.
Mashed Potatoes, Corn, Chicken, Shredded Cheese, and topped off with gravy.
Yes, it was heaven. We even had a hefty portion to freeze.
No one complained or whined, or opted for cereal.
