2 Ingredient Pineapple Whip - A healthy [and possibly dairy free] treat

Hubby found a link from someone else' share on Facebook and asked me to please make this Pineapple whip.
 
The original post is from Hip To Save. I must give credit where it is due.
 
This tasty sweet treat is inspired by Disney's Dole Whip. It's truly the one thing my husband gets excited about when we go to Disney World.
 
You can make this treat Dairy-Free. One friend suggested adding a hint of Coconut Rum for and "adult beverage". You can do that as well. We have kept ours family friendly.
 
You will need:
1 Pineapple
1 Cup Coconut Milk (or milk of your choice)
 
Here are the steps to follow:
Cut up and entire pineapple into chunks and freeze overnight.
 
We chose to use 1/3 cup of coconut milk and the rest of 1% milk.
 
Place frozen chunks of pineapple and coconut milk into a food processor or high powered blender.
We tried the blender this time. I wasn't crazy about the consistency, so next time, I'm going for the food processor.
 
Turn on food processor/blender and mix until the consistency becomes creamy.  You may have to stop several times and scoop down the pineapple. We had to do this. Several times...
 
If desired, put mixture in a plastic bag with the end cut off and put into glasses or cups.
I really appreciate the advice on the bags. I followed this step. It was so much easier to add the whip into the glass this way. Not to mention, you can make it look a little nicer as well.
 
Makes about 3-4 servings.

Surf Sharks - The First Ride, makes waves at my house #spon

My 2 older boys are reading fanatics. If I ever have the opportunity to review a children's book, I take it ! This opportunity was no different. My 8 year old son was watching the mail everyday !
 
We received this awesome Surf Sharks package with not only a book to read, but activities, bookmarks, and stickers.
 
 
Surf Sharks: The First Ride is about a group of surfing sharks and their human counterparts working together to solve problems big and small. Once Anthony read the book, he shared it with his older brother. Sometimes siblings don't always work together. The book showcases opportunities to make that happen.
 
 
Anthony likes to jump right into reviews when they arrive.
Once the package was opened (and my photos taken), there was no stopping him. He opted to put stickers in the sticker book first
 
 
Then built the paper figures.
 
 
The book has made its way from our home to school and back. Not only do my kids love to read, they love to share what they read! He took Surf Sharks to school for his teacher to read to his class. I will say the boys liked it better than the girls but the message across the board was clear to all.
 
For a recent Student Showcase at the school, groups of students had to work together to built a slideshow presentation. Anthony told me that he felt that it was similar to Surf Sharks. Everyone had ideas but they had to work together to solve the problem and create their project.

Our #STOMPNY @StrazCenter experience - Check out what my kids thought [vlog]

Yep, I'm overdue with this but I had a good reason for being so busy.
 
I swear!



1st Communion for my handsome 8year old consumed me !!


We had preparations and rehearsals and then a party for him and his Best friend, who also is my BFF's daughter. They've known each other since preschool and made their communion together.

Seriously, it was all consuming !!!!  

But I'm back now with minimal huge events going on for a while !!











We received our tickets and made our way into the hall.

The entry was buzzing with excitement!



The merchandise section was an instant draw. Drumsticks with STOMP printed on them were a huge hit with all the kids in attendance.








 



 



My oldest son kind of knew what to expect, but the others did not.

My husband and I attended a performance once before we had kids and loved it. We were both excited to see it again.

There was great anticipation and when the lights finally dimmed, they were memorized!









 
 The boys were excited to tell you about their experience

It was not overly loud and the performers are very engaging!
